Marvellous Mocktails - try some fancy non-alcoholic drinks (see videos below)
We have such a treat for you today. Four fabulous cocktails for you to try and enjoy. There really is something for everyone with: Refreshing "Nojito", Mock Pina Colada, Mango Sherbet and (if you are missing your favourite coffee shop a delicious creamy iced coffee blend.
Nojito - (optional - decorate the glass by dipping in lime juice and then in sugar). Place 3 - 4 slices of lime in a glass. Sprinkle with brown sugar (granulated is fine if you don't have brown). Crush slightly with a fork. Add mint leaves to taste. Top with sparkling apple (lemonade or sparkling water would also work).
Enjoy!
Pina Colada Mocktail: Put 2 pineapple rings, 1 dessert spoon of coconut cream and 1 dessert spoon of cream per person into a blender or food processor. Add two ice cubes and 1/2 cup of pineapple juice per person). Blend until smooth. Add ice to your glass. Pour in mocktail and decorate with pineapple slices and cherries. Enjoy!
Mango Sherbet: Put one cup of mango (fresh or frozen) and 1/2 cup orange juice per person into a blender with a few cubes of ice. Blend until smooth. Add to glass with some more ice. Carefully top with 7up (lemonade would work just as well). Decorate stirrers with slides of orange and mango (if you have them - we had to use a slice of lemon!). Stir and enjoy!
Iced Coffee: Make some strong coffee and stir in a teaspoon of hot chocolate powder - leave to cool. Whip cream with a drop of vanilla (or use a can of squirty cream if you have one). Put 2 dessertspoons of vanilla ice-cream into a bowl with 1 tablespoon of cream and 2 tablespoons of milk. Whisk until frothy. Add coffee and pour into a latte glass (or similar). Add two ice cubes. Top with cream and sprinkle with hot chocolate power.
Variations: Use hot chocolate or add more milk and a swirl of caramel sauce for caffeine-free versions.

Creative Cup Cakes - create something beautiful to enjoy and share!
Simple Cupcakes:
Beat or whisk 150g Butter with 150g Caster Sugar until light and fluffy. Add 3 eggs (stir in one at a time). Gently stir in 150g Self-Raising Flour and a drop of vanilla essence. (NB: to adjust the quantities, simply use 50g of butter, sugar and flour for every egg that you use). Divide into cup cake cases and bake at 180 degrees C for about 15 - 20 minutes or until springy to touch.
Simple Butter Icing: Whisk softened butter with a little cream and icing sugar until light and fluffy. Add a drop of vanilla for a nicer flavour.
Simple Icing: Stir a little hot water (or lemon juice) into icing sugar to make a very simple frosting.
Get creative with what is in your cupboard... decorate your cup cakes with icing, chocolate spread or jam. Add on sprinkles, sweets, cherries, marshmallows or fondant icing shapes to make decorations or create fun animal characters. (See photo gallery below to look at the designs more closely).

Keep Calm & Carry On Baking - some tasty muffins for you to try. Add whatever flavour you like best... mmmm!
Ingredients (too much? Just do half a batch)
1 cup brown sugar
1 cup plain flour
2 cups self raising flour
2 eggs
¾ cup vegetable oil
1 teaspoon bicarbonate of soda
2 cups milk
Plus your choice of filling chocolate chips, apple and cinnamon, blueberries, raspberry and white chocolate, banana and walnut... or you make up your own!
Bake in a pre-heated oven (200 degrees C) for about 20 minutes.
